How would you like to make almost everything yourself? Well let us start with homemade food mixes and ditch those over processed box mixes from the store!
Would you like to make some of your own food mixes such as spice blends, hot chocolate, cake mixes? You will save a bunch of cash doing this and it does not take very long, just a little prep to make sure you have everything you need.
You CAN do this, I promise!
By making all of your own mixes, you are empowering yourself to keep your pantry stocked and know exactly what ingredients are in those mixes instead of the franken food mixes you find in the grocery stores PLUS you save a butt load of cash. Yay!
Let me first show you what is lurking in a boxed cake mix. Don’t be scared or maybe you should…
Corn syrup -ewww, hydrogenated oils – double ewww. A whole bunch of crap that makes up for preservatives, binders, emulsifiers and what EXACTLY are Natural & Artificial Flavors anyway?!
Alright enough of that…. shuddering…. let us get right to the mix recipes!
Homemade Yellow Cake Mix
- 2 cups of organic all-purpose flour
- 1.5 cups of sugar
- 1 Tablespoon baking soda
- ½ cup non fat dry milk
Combine all ingredients and store in an airtight container for up to 3 months. This replaces a standard size(18.25 ounce) box cake mix. To make your cake see below.
- Cake mix from above
- ¾ cup water
- 1 tsp. vanilla
- ½ cup REAL unsalted butter, softened
- 3 eggs
Mix all in large bowl. Beat with an electric mixer for two minutes. Pour into a greased and floured 8-9” cake pan. Bake at 350o until toothpick comes out clean 20-25 minutes. I am sure you could divide this up into 2 pans to make a layer cake and bake for 17-18 minutes instead.
I use the dry cake mix on top of a sweet potato casserole and pour butter over the top before baking. It is so good! We have called this sweet potato cake since the kiddo was little to get him to eat veggies.
To make a chocolate version –
- 1 3/4 cup flour
- 1 3/4 cup sugar
- 1/2 cup raw cacao or cocoa powder
- 1/3 cup instant non fat milk
- 1 tsp. baking powder
- 1 tsp baking soda
- 1 tsp salt
Mix and store as above.
To make a cake. Mix with 1 1/4 cup water, 3 eggs, 1 tablespoon vanilla and 1/2 cup of melted butter. Divide between 2 greased cake pans and bake at 350- for 18-20 minutes.
This next mix I love to use with roasted cauliflower and broccoli!
Curry Blend DIY
- 3 teaspoons coriander seed, ground
- 3 tsp. turmeric powder
- 1.5 tsp ground black mustard seed
- 1.5 tsp ground chili powder
- 1.5 tsp fennel seed powder
- 1.5 tsp ground ginger
Mix together, fill little jar – makes 1/4 cup of spice mix.. To use: mix 1-2 tsp. into rice dishes or chicken salad. Can add to oil and vinegar dressings as your spice part. Usually 2 parts oil to 1 part vinegar or 50/50.
To treat a sluggish digestion and bowels, add 1 Tablespoon to food as needed.
