Trim Healthy Mama can sometimes be a challenge when you are making one thing for the rest of the family and you gotta come up with something quick for yourself! I don’t do this often, usually we eat the same main dish and I have different sides but I made the guys a roast with mashed potatoes and gravy – not my kinda food. 😀

I have a bunch of pumpkin in the house and had some ground turkey in the freezer so I thought I saw somewhere a THM friendly Pumpkin Chili recipe. Yep! On Pinterest – The Wellness Mama had one that looked great except it had beef sooooo I changed it to turkey and took out a few ingredients – VOILA!

My Pumpkin Turkey Chili (S)

Recipe –

1/2 lb ground turkey(I crumbled some turkey burgers)

1/2 onion chopped

1 stalk celery chopped

1 T. shredded carrot

1 garlic clove, chopped

couple of mushrooms, sliced

1 tomato chopped

1 cup homemade marinara sauce or can of tomatoes

1 cup pumpkin puree

1/2 cup water or chicken broth

1/2 T chili powder

1 tsp. garlic powder

1/2-1 tsp. cumin

1/2 tsp. himalayan salt

1/2 tsp. black powder

1/4 tsp cinnamon

In a sauce pan, saute onion, garlic, celery and carrots in a little olive oil. Add the turkey and mushrooms, saute until done. Add remaining ingredients, mix well and cook on med low for about 15 minutes. Sprinkle mozzarella on top and a few sliced onions(the onions were from the roast). Makes about two servings.

 

Easy Peasy, lemon squeezy! Speaking of lemons, I tried to make the Lemon Mousse in THM page 367 but still not sure it will fly. I am skeptical every time I use the glucconomann as a thickener. It make it kind of thick but not like I thought so I threw it all in the freezer. Let’s see what happens in an hour or so. 🙂
