It was bound to happen…two weeks on plan and then…we had chili – I made homemade biscuits. I just HAD to have one of those biscuits, they were tiny, really and I only had one!!!!!!! Why oh why did I not make cornbread, then maybe, just maybe I would not have been soooo tempted to have it with my turkey and black bean chili. Sigh….moving on 😀
Yesterday was good, For Breakfast, I made that amazing Apple Pie Oatmeal in a Crockpot that I posted on facebook. Here it is in case you missed it:
FABULOUS!!! RECIPE –
1 Cup Oats, soaked regular or steel cut
3 diced apples
1.5 tsp cinnamon or you can use apple pie spice mix.
3 C water, mix and cook low overnight.
Lunch – had a chicken salad wrap and leftover cauliflower soup.
Dinner – Roast Chicken, Zucchini “noodles” Alfredo and a cranberry compote sort of thing. 🙂
All I did was take a couple cups frozen cranberries, put them in a pot, added about 1/2 cup water, orange zest, orange juice(a splash), stevia, cinnamon and cloves. Cooked over medium heat about 6-8 minutes. You could mash them if you wanted. I just ate about 1/2 cup – tart and slightly sweet!
Dessert – Cake in A Mug – chocolately goodness!!! Made a topping out of ricotta cheese,coffee, vanilla and truvia.
Breakfast -Today I had the Apple Pie Oatmeal again, adding a little unsweet almond milk. Mmmmmmm!
Lunch – boring, a wrap and some celery with peanut butter.
Dinner – The chili and biscuit that started this whole post!!!! For Dessert, maybe I will have it later – yeah right of course I WILL!
Dessert – Ricotta Creme page 378 but I added almost two cups part skim really good ricotta cheese(I use Sorrento or Polly-O) put in the blender, added 1/2 cup brewed coffee, a good splash vanilla and two teaspoons truvia. Blend until smooth. You won’t believe your eyes – it is rich and thick like vanilla pudding or better yet tiramisu. Joy, Joy, Joy!!!
I am trying an experiment with it. I put it into three containers and placed in the freezer to see if it gets like ice cream consistency.
We shall see. 😉
