Here I am, I have survived…it is Day 6 of the Trim Healthy Mama “diet”. Can’t even really call it a diet because it is sooo fabulous! I lost 2 pounds this week – yipee! It is a start and I only have 8 more to go.

Today I made a couple of yummolicious(is that a word??? Ha my word!) meals.
Breakfast – (S) Just 2 scrambled eggs with fresh spinach, crushed red pepper and butter topped with crumbled feta.

Snack – an orange because I was grocery shopping and starving!!! I waited too long in between meals – a BIG FAT no no. Actually the orange tied me over til I got home and made lunch. 🙂

Lunch -(S) left overs from last night – Dreamfields Pasta with homemade white clam sauce and salad.

Snack -(E?) 1/2 cup lowfat cottage cheese and fresh pineapple chunks

Dinner – (S) I wanted to make this minus the pork ragu BUT I thought I had everything in the house until I check the outside fridge for some butternut squash and to my horror – ahhhhhhhh – the squah was old and mushy. 🙁 so I improvised! Guess what it was pretty darn good, even my hubby had some as a side dish to his wings. Here is my recipe for:

Zucchini and Spinach Lasagna with Chicken Sausage Ragu
This makes a small 8×8 pan enough for two, maybe three

3 zucchini, washed and sliced about 1/8 -1/4 thick
1/4 onion chopped
1 celery rib sliced
3 garlic cloves, chopped, separate 1
olive oil
crushed red pepper
1-2 all natural chicken sausages with sundried tomatoes – take casing off and crumble
1 14 oz. can crushed or diced tomatoes
a healthy pinch of cinnamon
1 bay leaf
salt and pepper
Locatelli or parmesan cheese
1 cup or so part skim ricotta
1/2 box frozen spinach, drained well!

Saute 2 of the garlic cloves, chopped onion, celery and crushed red pepper in a bit of olive oil over med low heat for 10 minutes, do not let it burn, turn down if necessary.

004 (1024x768)

Add sausage, stir and heat through. Add tomatoes(if you like it smooth put tomatoes in blender first), a healthy pinch of salt, pepper, cinnamon and bay leaf. Bring heat to medium until it starts to bubble, turn down again to med low, cover partially and cook for 20-30 minutes.

Meanwhile put sliced zucchini on a greased pan, sprinkle salt, pepper and olive oil. Cook in oven at 375o for 15 minutes.

006 (1024x768)

Put a little olive oil in a small pan and add the remaining clove of chopped garlic, cook for a minute and add the chopped, drained spinach. Heat through. Then remove and add the mixture to the ricotta cheese. Now you are ready to assemble.

Grab an 8×8 pan, add a scoop of sauce, then a layer of zucchini “noodles”, ricotta cheese, spinach sauce and repeat. Top with grated locatelli or parmesan. Cover with foil and bake for 30 minutes. Remove foil, bake additional 10-15 minutes.

oh yeah :)
oh yeah 🙂

AND I made the Choco-pudding for dessert from page 366. I am so hoping this is amazing!

On another note…I have another New Year’s Resolution. You know I just LOVE, LOVE bartering right? Well I am going to track all of my bartering for the year and see how much I can save by NOT spending too much on groceries, toiletries, services etc…

Want a healthier lifestyle this new year? Love learning with others and getting to discuss things, not just read them by yourself? Looking for more encouragement as you make changes? This conference is for you!

A twelve-week online conference, where we’ll tackle a one relevant topic each week, geared to helping you pursue well-being and greater vitality for yourself and your family.

Join in and listen (and even ask questions) to respected authors, and then find accountability, helpful links and resources, and friendly faces to discuss these topics with in our private Facebook groups. You’ll even get a chance to interact with the authors themselves! Plus, follow along with our Pinterest boards, where speakers will be pinning recipes, tutorials, informative posts or articles, and all sorts of other helpful resources related to the conference sessions.

Wherever you want! The beauty of an online conference is that you don’t have to go anywhere. Listen in through your phone or computer from the comfort of your own home, or simply stream or download the sessions to listen on your own schedule.

The first session kicks off on Tuesday, January 14, 2014 from 8-9 p.m. EST. The conference runs for 12 weeks in total, with the last session on April 1, 2014.

Because sometimes it’s not enough just to learn on your own. You need to be able to chat about issues, ask questions, learn how other women handle certain challenges, glean resources and help from each other, share your goals or struggles… BUT that can be hard to do, especially when you’re a busy mom.

That’s why an online conference together with private Facebook groups is such a convenient way to provide the support and guidance you need, but in a cost and time effective manner. This conference was created BY moms, FOR moms!

Sign up between now and January 14. You’ll receive an email with a member login where you’ll be able to access each weekly session as it goes up.

You’ll also receive a weekly update email, letting you know which session is up next, how you can join in to hear it live, a form where you can enter your questions that you’d like our speakers to answer, and information on joining each week’s Facebook group.

The entire 12 week conference is just $87 $67, or $5.58 per week!

For the cost of a fancy coffee or store-bought smoothie, you get to take in an hour-long session with knowledgeable speakers, who will answer live questions from attendees, and THEN you can continue to learn and ask questions in the week-long Facebook group that follows, as well as find practical and related resources through our Pinterest boards.

If you’re even remotely interested in growing in the areas of healthy eating, natural and sustainable living, home remedies, and managing it all without sacrificing your own health, this is a fantastic deal!

Please note that this is the special introductory rate, which will expire on January 28. After that, the cost will go up to $87.

Act now while before the price goes up!

Enjoy your night folks!
