Here I am, I have survived…it is Day 6 of the Trim Healthy Mama “diet”. Can’t even really call it a diet because it is sooo fabulous! I lost 2 pounds this week – yipee! It is a start and I only have 8 more to go.

Today I made a couple of yummolicious(is that a word??? Ha my word!) meals.
Breakfast – (S) Just 2 scrambled eggs with fresh spinach, crushed red pepper and butter topped with crumbled feta.

Snack – an orange because I was grocery shopping and starving!!! I waited too long in between meals – a BIG FAT no no. Actually the orange tied me over til I got home and made lunch. 🙂

Lunch -(S) left overs from last night – Dreamfields Pasta with homemade white clam sauce and salad.

Snack -(E?) 1/2 cup lowfat cottage cheese and fresh pineapple chunks

Dinner – (S) I wanted to make this minus the pork ragu BUT I thought I had everything in the house until I check the outside fridge for some butternut squash and to my horror – ahhhhhhhh – the squah was old and mushy. 🙁 so I improvised! Guess what it was pretty darn good, even my hubby had some as a side dish to his wings. Here is my recipe for:

Zucchini and Spinach Lasagna with Chicken Sausage Ragu
This makes a small 8×8 pan enough for two, maybe three

3 zucchini, washed and sliced about 1/8 -1/4 thick
1/4 onion chopped
1 celery rib sliced
3 garlic cloves, chopped, separate 1
olive oil
crushed red pepper
1-2 all natural chicken sausages with sundried tomatoes – take casing off and crumble
1 14 oz. can crushed or diced tomatoes
a healthy pinch of cinnamon
1 bay leaf
salt and pepper
Locatelli or parmesan cheese
1 cup or so part skim ricotta
1/2 box frozen spinach, drained well!

Saute 2 of the garlic cloves, chopped onion, celery and crushed red pepper in a bit of olive oil over med low heat for 10 minutes, do not let it burn, turn down if necessary.

Add sausage, stir and heat through. Add tomatoes(if you like it smooth put tomatoes in blender first), a healthy pinch of salt, pepper, cinnamon and bay leaf. Bring heat to medium until it starts to bubble, turn down again to med low, cover partially and cook for 20-30 minutes.

Meanwhile put sliced zucchini on a greased pan, sprinkle salt, pepper and olive oil. Cook in oven at 375o for 15 minutes.

Put a little olive oil in a small pan and add the remaining clove of chopped garlic, cook for a minute and add the chopped, drained spinach. Heat through. Then remove and add the mixture to the ricotta cheese. Now you are ready to assemble.

Grab an 8×8 pan, add a scoop of sauce, then a layer of zucchini “noodles”, ricotta cheese, spinach sauce and repeat. Top with grated locatelli or parmesan. Cover with foil and bake for 30 minutes. Remove foil, bake additional 10-15 minutes.

AND I made the Choco-pudding for dessert from page 366. I am so hoping this is amazing!

On another note…I have another New Year’s Resolution. You know I just LOVE, LOVE bartering right? Well I am going to track all of my bartering for the year and see how much I can save by NOT spending too much on groceries, toiletries, services etc…
